You can lower the temp by cutting back on some of the air supply, by closing the vents, but I don't recommend closing them all the way.. else you're susceptible to coating your meat with creosote, a nasty, bitter resin given off by fire that normally escapes through the vents.. hope this helps..

You get the point. There's as many methods as there are people. I'm kind of a purist and would never in a million years boil a brisket or put it in an oven before putting it on the smoker. I also use mustard because the vinegar tends to help tenderize it and even thought the video says to cut off the fat, I tend to leave some for flavoring.

Normally we inject ... By: r0v2967. on 24 Sep 08, 12:14:37 Normally we inject our whole entire TURKEYS before we deep fry them. We'll use at least 12-16 oz's of seasoning to inject them and we fry them up in a about 20 gallons of peanut oil.
For Brisket, I try to not add any holes because since we're cooking slow and low for about 12-15 hours, a lot of internal moisture can escape from the added holes, but I guess if you inject it well enough, the moisture is in there right? Anyway, great video! Good job.

What I like to do when I cook chicken legs on the grill is add some hickory or even mesquite wood chips to give it a good smokey taste. You do not have to use much, just enough to give it a color on the skin. You can have the dry rub on the chicken legs either before or after the smoke, but add the sauce after smoking the legs. The method doesn't exclude the use of cream cheese, he simply chose to use a different cheese. If someone wanted to they could substitute for cream cheese and it would work fine.
