Vegetarians know to eat seeds/nuts for protein without meat. Quinoa can also replace wheat in tabouli (for those allergic). Can't tell the difference. I have never done this YouTube. Certainly didn't mean to degrade the quality of the video. Hope it wasn't taken that way. It is great for people who don't know. The lady has a beautiful smile - very nice! Thanks!

Quinoa is not pure protein. Though is does contain all 8 amino acids, it is only 12-18% protein, it has ~5x more carbohydrate than protein.

When it first came on the market in the 80s the natural coating on quinoa (saponin - which detracts birds and insects)made it best to rinse the grain with warm water before cooking. Otherwise there was a bitter flavor. Nowadays it is hard to find quinoa that hasn't been pre-rinsed.

I don't recommend steaming collard greens for a long period of time. Steaming actually increases the bitterness in the greens. For added flavor, dress the cooked greens with Coconut Peanut Sauce or butter, lemon and garlic. Another cooking method that works for collards is BRAISING. Sometimes we blanch them a few seconds in the microwave.
If you marinate collards overnight in oil, they will become very tender, as if they had been cooked. I have friends who eat all their vegetables uncooked. They are quite healthy and slim.
A great recipe for marinated collard is in THE COLLARD PATCH.
Also we place them in cole slaw with cabbage.

The length of time depends on the sturdiness of the greens you are cooking. It's all about tasting them. Usually about 5 minutes for collards but could be longer if they are more mature, less if they are young. Steaming them actually intensifies the bitterness. What I did was basically cook them about 4 hours until they were done, then reheated them in the solar cooker the next day with no refrigerator in between. I cooked them without the reflectors so the temp. stayed at 160-190 F. That way I didn't have to do much except move the oven a couple of times. I made a huge pot...5 servings which is 1 plus 1/4 cup dry. Better than nuking.

So there may be an "advanced steel cut oats" video coming up. I stand by the way we did it, even with the peanut butter option. But here's what I'm learning. Cook it on a lower heat and stir as little as possible. When you stir use the handle end of the wood spoon. And a portion of that water can be milk. I tried it. 3 water to one milk. Fluffy. Awesome.

By: achsofromm. on 11 Mar 08, 02:19:06 I make mine in the microwave using 1/2 cup of the oats, 2 cups of water which I don't need to measure cause it just fills the bowl, nuke for 6 min. then let it set overnight. In the morning, I stir and reheat for exactly 3 min. on high and they are perfect. They never boil over and the whole process takes me less than a minute of preparation. Since I eat 6 servings of oats a day, I've become an expert at cooking them. I don't use salt either.

Most quinoa is pre-rinsed now to remove the natural saponin on the grain. The saponin is what causes the bitter flavor. If not, you need to rinse the grain in warm water and strain it before cooking it. Then it has a nutty flavor.

There is no one sauce like Teriyaki-Sauce per se.
So, it's ok to go for original.
They usually use soya sauce, suger, rice wine and ginger.
Some people add Mirin to make the sauce nice and mild.
Some people put honey instead of suger.
But I think garic is not necessary.
Of cause it is up to you what you put in your sauce to make your favorite taste coz the whole point of cooking is to eat what you like.
