Hi LIVELISTENLAUGHLOVE, I don't think it's necessary to drain and add fresh water. I'm guessing that some folks might feel that draining the water would provide for a clearer broth. If I were to drain the water, I'd also have to remember to slightly undercook the noodles since I'd have to bring the water and noodles to a boil again in order to poach the eggs I added. And that's all I have to say about that. Thanks for asking!

The difference is one of flavor and texture. The American cabbage is stronger tasting while the Chinese cabbage is lighter flavor.

It's fine to call them spring rolls! Actually the generic name is spring roll. It has to do with the time of year they were originally made. Chinese New Year! Egg rolls generally are made with the heavier wheat based wrapper while spring rolls are made with the finer rice wrappers.

Hi LoryRory, There are a number of options for dipping sauces. If you like hot mustard you can mix powdered yellow mustard with some vinegar to make a paste. Add the vinegar slowly a teaspoon at a time until you have the consistency you want. You can also make a sauce with catchup and soy sauce. Mix it 50/50. Soy Sauce with a bit of chili oil, chopped scallions, and little sugar is pretty good too.

Hi Jennyyz! The amount of pork can be between 1/2 - 1 lb. Depending on how much Bok Choy you want to use. I know some folks don't use any bok choy, so they might use a whole pound of ground pork. Hope that helps! Let me know how it comes out!

Yes, I did prepare the bok choi. I rinsed it and took off the outer leaves to make sure there were not bugs or dirt. You can either grind the pork yourself or have it preground. If you wanted to be authentic you'd take two cleavers and chop it yourself. Chopping actually gives the pork a lighter texture than grinding it. I've cooked rice all three ways and it seems to turn ou the same for me! Great questions! Thanks for asking. Chris

great video =) Some Questions: did you wash that cabbage? what if there was dirt and insecticide between the layers of cabbage? what kind of pork did you use? is it better to grind it yourself of buy it pre-ground? also, why do you cook rice on the stovetop instead of with a rice cooker? i know rice tastes better cooked on a gas stove, but electric too?

No need to apologize! The insides of the wontons cook very quickly in boiling water because there's only a half teaspoon or so of chopped pork in each one. If it were a solid chunk of meat or a big dumpling you'd need to boil it longer. That being said, remember, recipes are really just suggestions. If you want to overcook your wontons and like them soggy, rather than al dente, you can certainly do that without apology! Two minutes in boiling water will cook the insides just fine though.

Please do share your filling recipe with us! As for the broth, the best that I've found is to do the boiling of a chicken carcass with some of your favorite spices. You can also use cubes or powdered soup base at HALF strength. That's TWICE the water called for. Then, drop chicken parts like the neck into the soup to simmer.Other than that, most of the flavor comes from the seasoning in your filling diffused into the soup as you cook the wontons.
