I love quinoa. Mazing that it has existed for so long as a superfood. Really, i guess it's like a manna, which is what i will call it. Is there a difference between regular and red quinoa?

I usually cook the whole 500g bag, & eat half of it in one go (500g when cooked). It's great for if you eat a lot (1kg cooked), & that only costs about £1 (£2 a pack).

Only 1.89 a pound here at my local health food store in the "bag it yourself" section. I prefer to follow David Lynch's directions. The video is on youtube and the Inland Empire DVD.

Chop one large onion (small dice).Add it to a pot with 2 tsp evoo. Sweat onion.Add 2 cups Quinoa and stir to coat it with the onions and oil.stir in 2 tbs crushed red peppers.Add 2.5 C chicken stock.Bring to a boil.Cover stock pot and place in 350 degree oven for about 20 minutes.Remove from oven and fluff quinoa. Salt and pepper to taste.Squeeze one lime over quinoa and add grated parm to taste. Serve with chicken or over leafy greens or eat as a complete meal. Chef Michael

Rinsing the quinoa is very important. If you don't it will have a bitter taste. For those of you that want to try quinoa don't miss this step. Chef Michael
