You're right about Aussie. Okay, two things will make your egg go soupy - one is the egg is stale and the other is the water is too cold. Your egg needs to be as fresh as you can get and the water needs to be just below boiling point when the egg is added.

The vinegar helps the white to remain intact rather than feather. Isnt necessary and some like to flavor the egg with champagne vinegar but a tablespoon or 2 of white vinegar in a 10inch pan with 1inch water will yield a neutral result. The thing about using fresher eggs is that the membrane around the yolk breaks down with time the fresher the egg the firmer the membrane and hence a smoother, custard-like yolk when poached. The simple method is perfect for breakfast at home.

I tried the vinegar method and wound up with an egg that was poached just fine, but it tasted of vinegar. I just made a beautiful poached egg with the method you demonstrated. Gordon Ramsey uses the same method, but it seems very hectic and I didn't think I'd be able to do it. Thank you for your simple, calm instruction!

Your egg is not fresh enough, it's as simple as that. As eggs age the whites become watery and they will break up. They will also spread when dropped into a frying pan. Ergo, try again with a fresh egg. You can see from the comments how many people have had success with this method.

I hardly see a difference between skiers and snowboarders but you guys just hurt the cause by poaching it. If Alta was just snowboarders and it kept the numbers down I wouldn't be complaining. So I can't say I blame them for wanting to save some powder. Its not a big deal, now there are only 3 resorts that don't allow snowboarding. Who cares.
