agreed. I'm from Kentucky. My people know what real cornbread dressing is. It's best when it's simple. My mama makes the best cornbread dressing ever and she doesn't use no crazy shit like crasins or apples or even a RED onion? No self respecting southerner would put a red onion in dressing. Sweet onions are best! I'm disappointed at most of the cornbread dressing recipes I've come across on Youtube.

Thanks for the kind words. Regading the spatula...we picked it up at a dollar store (Dollar Tree) a few years ago and it is one of the best we have ever found. If you ever find it, buy a dozen! It is heat resistant and one of our favorite tools in the kitchen.

This will work with a tough cut such as "london broil" though I am sure it cant compare with a "good" cut. If using a tough cut, then cut thinly, no more than 3/16 inch thick. Further, cut 90° to the grain or as close as you can get. Then, from the 90° aspect, cut as near 45° top to bottom as you can get. This means you are cutting downward at a 45° angle across the grain. You will need to start your cut about ½" inch from the edge to do this. This will make your tough cut of meat seem tenderer.

I was listening to the radio .... there was a talk-back discussion of different fried rice recipes, and someone mentioned they went to a Thai restaurant and the fried rice had tomatoes cooked with it. Question - Why did you use a charcoal chimney to pour the charcoal briquettes into the grill, and then light them with fluid, when the whole point of a charcoal chimney is to light briquettes quickly without the use of fluid? I'm just realizing that cooking on the grill is a real art. You may have convinced me to buy a charcoal grill instead of a gas grill. Seems like gas might be quicker in some ways, but maybe real grilling shouldn't be rushed. Thanks for the great recipes. They're simple and easy for me to remember. Can't wait to try some.

1. for the egg yolks you can, just be sure to temper them so they don't scramble (Mix a bit of the batter into the egg yolks, then add to mixture, so the temperature is raised slightly) The heat already in the cake should cook it though. As for the egg whites I wouldn't add them while over the double boiler, as it might deflate the fluffiness. if you are really worried, try whipping them over a double boiler before you refrigerate them (low heat of course) otherwise follow the recipe 2. yes

I have it marinading right now, will cook tomorrow. marinade did not taste right to me but i really didn't know how to tweak it. i can cook a nice traditional bbq chicken and i plan to use some of those techniques when cooking this chicken - such as adding olive oil to the marinade and just basting with that. fingers crossed. has anyone out there found ways to tweak this recipe? writing a recipe for 6 pieces of chicken seems silly, who would go through all this hassle for 6 pieces of chicken?

Yes, you can use Chicken breasts and thighs as well. The presentation with drumsticks is awesome and that is why we used it. Keep in mind that of you are using chicken brests, baste it more often and make sure it does not dry out. Also, the cook a lot faster than thighs and drumsticks.
