Ingredients:
1/2 gallon (8cups) milk
1/4 cup lemon juice
1/2 cup sugar
1/4 teaspoon ground cardamom
For Garnish:

I ferment the first and second dough (paton and detrempe) for at least 8hrs. This promotes a better, more complex flavor. The folding instructions you have are correct, in my video the second book folding was edited out by mistake. Good butter definitively helps for texture, look for unsalted butter with 84% fat, if you can find it. Best, P.

Pino, I am learning how to make croissants from 'About Professional Baking', a textbook. I noticed that you fermented your dough overnight before incorporating the butter, as well, I noticed you only sealed the butter and folded it, and then folded it one more time. I have been told for danish/croissant dough to turn it 3 times, and puff pastry, 4 times. Do both these steps that you do promote a more flaky dough?? thanks for your help! Love your videos! hydrogenated fats are very convenient for baking because they are malleable and they extend the shelf life of the baked product BUT they are poison for our arteries and they never taste like real butter.

there is also a type of butter/margarine thing that is especially for pastry. it melts at highter temperature so its easier to make the croissants and tastes just as good.

You need to mix a small ammount of flour with the butter in a mixer. like 4oz flour per 3 pounds of butter. Mix it untill it becomes soft. Its almost like a reaction. Then Put the butter in between 2 sheets of wax paper or parchment paper... Then roll it out into a square that is the same size as your dough.. Then chill it for 30 min in the freezer.. Then when you take it out just take off one side of the paper, lay it down and take off the other paper. and then fold dough over it..

work in a cold kitchen and make sure your oven is at the right temp before baking. in the summer it's hard to make croissants unless you have a/c in the kitchen.
