The insides of the wontons cook very quickly in boiling water because there's only a half teaspoon or so of chopped pork in each one. If it were a solid chunk of meat or a big dumpling you'd need to boil it longer. That being said, remember, recipes are really just suggestions. If you want to overcook your wontons and like them soggy, rather than al dente, you can certainly do that without apology! Two minutes in boiling water will cook the insides just fine though.

That's TWICE the water called for. Then, drop chicken parts like the neck into the soup to simmer.Other than that, most of the flavor comes from the seasoning in your filling diffused into the soup as you cook the wontons. You can either grind the pork yourself or have it preground. If you wanted to be authentic you'd take two cleavers and chop it yourself. Chopping actually gives the pork a lighter texture than grinding it.
I've cooked rice all three ways and it seems to turn ou the same for me!
